My client, is a world renowned, luxury restaurant chain offering a sophisticated dining experience with locations UK wide.
They are looking for a Food Technician to join their culinary team to create, implement and manage the F&B, technology & safety strategy within the group. You will be responsible for ensuring full compliance and trace-ability of all food and beverage products, supply chain integrity, allergen, nutritional data and HACCP and operational compliance.
- Create, implement and manage the F&B, technology & safety strategy, demonstrating it exceeds the offering of its direct competitors in terms of range, innovation and quality. To review menus for legality, ensuring both statutory and ‘best practice’ compliance in relation to matters such as allergens advice, foods less than thoroughly cooked and training standards/descriptions. Up-to-date food labelling knowledge with due diligence controls. Review existing and new product performance on a weekly and monthly basis based on insight form Non -conformance, Procurement, FSA and NSF ranking data and amend the range as appropriate. Communicate, deliver and implement smooth menu launches according to the Commercial team strategy covering Allergens, Nutritional and basic trading standards guideline. Ongoing review and improvement of business practices, technology and equipment to drive better efficiencies in the business. Monitor compliance with or investigate breaches of food safety legislation. Deliver HACCP training to new starters and liaise with Area Chefs to achieve 4/5 stars across the group.
You will have:
- A minimum 5 years’ experience as a technical manager in a food service or manufacturing business. Strong communication, influencing and management skills within a complex and multiple stakeholder environment. Good analytical, report writing and presentation skills. Demonstrative passion for innovation and continuous improvement.
